Laguna Niguel at Raya Dinner in Raya, Riton, Risa

Raya is the restaurant concept of Richard Sandoval. It shows the iconic Latin of Pan Latin’s coastal food, which is the iconic Latin of Sustainable Seafood, local agricultural products, natural and organic meat, and chef Chef Sandoval. Flavor. Raya was named “Best Restaurant of the Year” by Riviera Orange County in 2011.

Raya is located in the Ritz Carlton Hotel in southern Oraland. The room is beautiful, luxurious and unique. The weather is clear, and the terrace is a better choice, but the interior of the restaurant can still enjoy the panorama of the ocean.

The menu is divided into three parts: sharing, small plates, salads and soups and special dishes. We do not use soup or salad brothers, because the product does not look so interesting. Instead, we focus on the special dishes of the restaurant, starting with WagYu beef ART.

Wagyu represented Japanese beef, but I doubt that beef is from Japan. It is still very gentle, just A5 level. This dish uses black garlic egg yolk sauce, coinichon, marinated egg yolk, marinated mustard seeds, green olive sauce and bread.

I’m not sure why this dish is a desktop. This is not a performance. They can be easy to prepare in the kitchen and bring it to the table, and you will not miss anything.

Grilled cauliflower with peanuts, Gloro sauce and smoked grape peppers. This is a strange dish. Grasp the entire cauliflower head, but don’t cut it off. Instead, bake the whole thing in the oven until the shell is produced outside, and then hide it in the sauce. Strange but good.

Seafood corn cakes made of shrimp, dungness crabs and lobster. Creamy Gourlo Sauce with cream, with heirloom cherry tomatoes. I have tried one of the best tasting spicy corn cakes. This is also the most expensive hot sauce corn cake I have tried.

The last dish was called Mariscos Lo Macho. It is a traditional Peruvian seafood sauce. It is salty, rich, aroma and slightly spicy. It can be paired with almost any seafood. In this case, Raya combines the sauce with the calm mussels with the bass, the tiger shrimp and the small neck. Yucaa, Tomato and Salsa Criolla finished this dish.

Cream corn sauce on scallops and pork belly. These ingredients are placed on one side of the plate, which makes me want to know if it should be on the other side. Scallops and pork belly are very tender.

There are four desserts on the Raya menu. We decided to taste two of them: peaches and cream frozen cakes and lemon cakes. Both are very good, a good way to end meals.

The dinner of the four reaches more than $ 100, which is quite reasonable for a food restaurant. If you find that you live in Ritz-Carlton (indeed in Dana Point) in Laguna Niguel, Raya’s dinner should be part of your itinerary.
